Leek and mushroom soup. Very light soup and there's not much oil. The ingredients that are used for this soup is very simple.

Ingredients
- Shiitake/dried mushroom
- 1 stalk of leek
- 1 carrot
- Salt/soy sauce/ fish sauce

Method
1) Wash the mushrooms and put into a pot of water till boil. You can choose to slice it or just cook it as a whole mushroom.
2) Cut the carrot into bite size and put it to the pot and cook together with the mushrooms.
3) Chop the leek diagonally and wash it in tap water for a few secs.
4) Stir-fry the leek in pan until half-cooked to get rid of the garlicky smell and mix it in with the pot of soup.
5) Add the salt/soy sauce/ fish sauce to the soup to your liking and wait for it to boil.
6) Scoop the soup to a soupbowl and start your dinner.

Simple steps to delicious healthy soup. Enjoy.
